Meatloaf Sliders with Baconnaise


Meatloaf Sliders with Baconnaise are not only a great way to use up Meatloaf, they are the reason Meatloaf was created! One of the most popular sandwiches served in American pubs, these mini burgers are smaller than a standard beef burger, so one, might not be enough. Adding Baconnaise (cooked smoked bacon combined with mayonnaise) take these sliders up a notch or two!

Essentially this recipe uses leftover Meatloaf, Slider buns and is complimented by crispy onions and Baconnaise.

Ingredients

  • Meatloaf: cooked and ready to eat. This is the BBQ Meatloaf recipe I used.
  • Buns: use rolls, slider buns, whatever you would like.
  • Crispy Fried Onions: I used premade store bought ones.
  • Mayonnaise.
  • Smoked bacon.

Instructions

Cut the buns in half. Cook the bacon on a Silpat Mat in the oven. See my recipe for Smokey Pumpkin Soup to see how to do this. Crumble the cooked bacon into a small food processor, add mayonnaise and blend.

Toast the buns. This gives them a little more stability and they won’t easily fall apart. Spread the Baconnaise over the toasted buns, both tops and bottoms.

Warm the pieces of Meatloaf in the microwave if they are not already warm. Place a piece of Meatloaf on the bottom bun, add crispy onions, then add the top of the bun. Your Meatloaf Sliders with Baconnaise are now complete – enjoy!

Flexibility

This recipe lends itself to all sorts of substitutions:

  • Meatloaf: My friend told me she used Spam when she didn’t have Meatloaf. I pretended I didn’t hear her. If you don’t have any homemade Meatloaf, purchase ready made Meatloaf at the hot counter in your local grocery store. It will stretch more if you use it for sliders.
  • Buns: potato rolls, thick slices of sourdough, sweet Hawaiian buns, slider rolls, even a bagel or biscuits will work.
  • Crispy Fried Onions: instead you can use caramelized onions you prepare at home (sliced onions sautéed in a frying pan with olive oil on a low / medium heat. When they are golden brown they are ready.)
  • Mayonnaise is the best ingredient here, but if you have to use a mayo alternative, then do it.
  • Smoked bacon there is no substitute for smoked bacon. Period.
  • Cheese is also an optional addition.

If you don’t have a food blender, then chop the bacon up and add it to the mayonnaise and stir.

Uses for Meatloaf Sliders with Baconnaise

Meatloaf Sliders with Baconnaise are a great addition to the party appetizer scene. Kids, teens and adults alike love them. They also hold a place of honor at any Super Bowl party.

Add these Meatloaf Sliders with Baconnaise to your appetizer table, along with Corn Ribs, Air Fryer Potato Skins, Hot Honey Lemon Pepper Wings and Mozzarella and Roasted Tomato Pizza.

You will be thanked if you pack them in you kids’ lunch box! Eat them for dinner, serve with a side salad and an order of fries or chips (crisps for my UK friends.)

Storage

Meatloaf sliders store well in the refrigerator. Eat them the following day, any longer than that, will make the bread part get soggy.

I would not recommend freezing them, the texture of the Baconnaise becomes compromised.

This food processor is not needed but it makes the Baconnaise easier to make.

A Tip From Me

When cutting Meatloaf, allow it to rest for 10 minutes. This means leave it on the sheet pan and don’t cut it. Cutting it when if first comes out of the oven, will tear the Meatloaf and make it fall apart.

Meatloaf Sliders with Baconnaise are next level appetizers. When making Meatloaf, make a double batch and freeze the extra one. Defrost the Meatloaf, especially when you are expecting company over and use for Sliders. Everyone will thank you!

  • 4 slider buns or similar
  • 3 oz mayonnaise
  • 2 strips bacon
  • 2 oz crispy onions such as French's
