Air Fryer Potato Skins


Air Fryer Potato Skins belong on any Game Day table or any other table! Roasted Potato Skins hollowed out and filled with cheeses, smoked bacon crumbles and topped with sliced scallions. It’s a great appetizer, lunch choice, dinner side or late night snack. Cheesey, smoky, comfort food.

Double air fried, once to cook the potatoes and then to finish the Potato Skins.

Ingredients

  • Baking potato: such as Russet or Idaho.
  • Precooked bacon: smoked, natural bacon is preferred.
  • Cheese: any cheese or combination of cheeses that melt well. I chose mozzarella and Irish Cheddar.
  • Olive oil.
  • Salt and pepper.
  • Scallions.

Instructions

Add salt and pepper into a bowl and add olive oil.

Wash the potatoes, pat them dry, then use your hands to cover each potato in the seasoned oil.

Place the potatoes in the air fryer basket and then place the basket into the air fryer at 400 degrees F. for about 35 mins. Check doneness with a thin knife. Air fry for longer if needed, especially if the potatoes are big.

While the potatoes are air frying, prepare the other ingredients. Shred any cheese that is not already shredded. Slice pre cooked bacon into strips. Wash and slice scallions.

When the potatoes are cooked, leave them to cool a little, (easier to work with.) Slice them horizontally and scoop out some of the center. Leave some of the potato to enjoy. Brush with the remaining olive oil used to coat them.

Fill them with cheese, and top with bacon bits. Return them to the air fryer, 400 degrees F. for 5 mins or until golden brown. Sprinkle with sliced scallions and serve immediately.

Flexibility

  • While a baking potato is preferred, use any type of potato you would like or that you have. Sweet potatoes would be a delicious alternative.
  • Use raw bacon and cook it first in the oven or use ham, shredded chicken or beef instead of bacon.
  • Use any cheese you have in your refrigerator, but it you want to buy cheese specifically for this dish, then I would recommend smoked Gouda. It melts well and will compliment the smokiness of the bacon too.
  • If you don’t have olive oil, use butter.
  • Garnish with something green if you don’t have or like scallions. Parsley or chives are good substitutes.

Uses for Air Fryer Potato Skins

Air Fryer Potato Skins are a great game day appetizer. Use them also as a lunch choice. These are easily included in any packed lunch, can be eaten warmed up or room temperature and they are filling enough to hold you over until dinner. Potato Skins can also be a dinner side, treat them as a baked potato and add sour cream to them or make them your late night go to snack. In any case, you will get a lot of milage out of this dish.

Add these Air Fryer Potato Skins to your appetizer table, along with Meatloaf Sliders with Baconnaise, Corn Ribs, Hot Honey Lemon Pepper Wings, and Mozzarella and Roasted Tomato Pizza.

This recipe is great to use if you have any leftover baked potatoes. Pick up the recipe where it says to cut the potatoes horizontally and go from there! No waste!

Storage

Store Air Fryer Potato Skins in an airtight container in the refrigerator for no longer than 5 days.

Freeze them for up to one month. Any longer than that, compromises the texture of the potato.

Reheat these Potato Skins in the Air Fryer. As they are fully cooked, make sure they are heated through and slightly sizzling on top. This will take 3-5 minutes at 350 degrees F.

A Tip From Me

If you want to save time with this recipe, cook the potatoes in the microwave for the first part of this recipe. This will take about 2-4 minutes per potato, depending on the size and quantity of potatoes and the wattage of the microwave. The wattage shows how powerful the microwave is, the higher the wattage the more powerful it is. Finish them the air fryer to get the cheese melty and the bacon crisped up.

I’ve got answers – hopefully!

  • I don’t have an air fryer, but I would like to make this recipe, what can I do? You can make this recipe entirely in a convection oven. Use the same temperatures and timing to be successful.
  • Is this recipe healthy? I wouldn’t say so, but it is a better choice than a lot of other appetizers. However Potato skins provide protein, fiber and some vitamins.
