Crispy Red Potatoes cooked in the Air Fryer are the perfect accompaniment to almost any meal! A few ingredients, an Air Fryer, and you’re all set. Crispy outsides, tender fluffy insides and budget friendly.
Wedges of red skinned potatoes tossed in olive oil, seasoned and coated with Herbes de Provence, make this dish fancy enough to serve at a dinner party, yet basic enough to serve any night for a family meal.
Ingredients
You will need potatoes, oil, herbs and salt and pepper.
- Red Skinned Potatoes, any size as they will be cut. The best type to use are red skinned Yukon gold potatoes, but any red skinned potato will work.
- Oil – use a high temperature oil, I use olive oil NOT extra virgin olive oil, just olive oil. Olive oil has a high smoke point and is good for any cooking involving temperatures higher than 350-415 degrees F.
- Herbes de Provence is a mixture of dried herbs, usually savory, marjoram, rosemary, thyme, oregano and lavender. This herb blend got its name from the Provence region of southeastern France. Store bought is fine or feel free to find a recipe and make your own.
- Salt and pepper.

Instructions
Wash and cut the potatoes into uniform pieces. Place them in a bowl with enough water to cover them. Stir a tablespoon of baking soda into the water and steep them for 10 minutes.
This important step breaks down the pectin in the potato and draws out the starch. After about 10 minutes, you’ll see the starch floating on the surface. This step results in a crispier fried potato and in this recipe, that is the goal.
After 10 minutes, drain the water and use some pieces of paper towel to dry off the potato pieces. In another bowl mix the oil, Herbes de Provence and salt and pepper together. Add the potatoes and mix.
Add the potatoes into the air fryer basket. If your air fryer is smaller, then place only half the quantity of potatoes in the basket. Add the other half once the first batch has cooked. Air fry at 400 degrees F for 18-20 minutes, or until the potatoes are golden brown and have crispy edges.
Flexibility of Ingredients
If you choose not to use a red skinned Yukon or any other type of red skin potato, then choose a potato that fries / roasts well, such as Russet, Fingerling, or Adirondack Blue (known as purple potatoes.) Baby potato medley sold at most supermarkets is also a good choice.
Substitute olive oil for any other oil or fat that can handle high temperatures such as avocado oil.
If you don’t like Herbes de Provence and would rather add a single dried herb or another type of herb mix – go for it! Oregano, thyme, rosemary and marjoram are all good to add on their own.
Flexibility of Equipment
If you do not own an Air Fryer, then roast these potatoes in an oven or toaster oven. Put the prepared potatoes on a sheet pan and place in a pre heated 450 degree F oven for 40 minutes.

Uses for Crispy Red Potatoes in the Air Fryer
These Crispy Red Potatoes are a great addition to any meal. I recommend serving them with Schnitzel. Apart from being a versatile side dish, they also make a delicious main course. Melt cheese over the top, add crispy bacon, and sliced scallions and lo and behold, a delicious entree has been created!
Move over hash browns or home fries and make these your potato accompaniment for breakfast.

Storage
Storage of these potatoes is easy. They can be refrigerated for up to 3 days and frozen for up to 3 months. Defrost in the refrigerator overnight.
Re crisp and warm potatoes for 4-5 minutes in the air fryer at 350 degrees F.
A Tip From Me
Make extra batches of these potatoes and freeze them. When preparing them to be frozen, follow these 2 easy steps:
- Lay the fried potatoes, in a single layer, on a flat tray lined with parchment paper or a Silpat baking mat. Freeze for 4 hours.
- Remove the potatoes from the tray to a large sealable storage bag, then freeze. Write the date on the label part of the bag.
Doing step 1 enables the potatoes to be ‘Individually Quick Frozen’. This process freezes the food faster and decreases the likelihood of the potatoes from clumping together. When you want to use them, it is easier to take out the desired amount from the storage bag.

- Why not roast these potatoes in a conventional oven? Using an air fryer is faster (20 minutes in the air fryer compared with 40 minutes in the oven). An air fryer is also more energy efficient, using less electricity.
- Are air fried potatoes healthier than deep fried? Simple answer is yes – according to WebMD, air frying cuts calories by 70% to 80% and has a lot less fat. Air frying might also reduce the amount of Acrylamide formed (chemical produced when starchy foods such as potatoes are deep fried in oil.) Acrylamide has been linked to greater chances of getting cancer. One study shows that air frying lowers the amount of acrylamide in fried potatoes by 90%. More information about this here.
- Shouldn’t I boil the potatoes first before air frying? No need, if the potatoes are cut into smaller uniform chunks.
- What if I want slices of potatoes instead of chunks? Sliced potatoes will absolutely work, but pay attention to the cooking time, it mayl be shorter. It’s hard to determine how much shorter as it depends on how thickly sliced the potatoes are. Check sliced potatoes after being in the air fryer for 12 minutes. Test their doneness with a thin knife, if tender, golden brown and crispy, then they are ready, otherwise continue air frying until they are done.
