Reuben Egg Rolls (Corned Beef Egg Rolls)


Reuben Egg Rolls use the leftovers from St. Patrick’s Day and turns them into something beautiful! Corned Beef, Cabbage, and caraway seeds get wrapped up in a fresh egg roll wrapper, then air fried and served with a classic Reuben sauce for dipping. This should become the official food for March 18th!

Nobody really wants a plate of Corned Beef and Cabbage reheated in the microwave the day after St. Patrick’s. This recipe for Reuben Egg Rolls, will undoubtedly have everyone thanking you for your creativity with yesterday’s leftovers. Go ahead and take ALL the credit!

This is fusion confusion at its best! Take Irish American ingredients (spoiler – Corned Beef and Cabbage is not Irish, see my recipe for Corned Beef and Cabbage to see why,) and add caraway seeds, and you have the makings of a Reuben sandwich. Who doesn’t love a well filled Reuben sandwich from a Jewish deli? But, instead of bread, we’ll be using a fresh Egg Roll wrapper, and in doing so we’re now heading in an Asian food direction. So, whether we are unsure what box to check – Irish, Jewish, or Asian, we can definitely check the box that says delicious!

Ingredients

  • Egg Roll wrappers: found in the refrigerated section in your local supermarket.
  • Corned Beef: shredded with as much or as little fat removed according to your personal choice.
  • Cabbage: leftover from St. Patrick’s Day meal is perfect. I used my Fermented Cabbage.
  • Mayonnaise: preferably full fat.
  • Ketchup.
  • Olive oil.
  • Worcestershire sauce.
  • Horseradish: freshly grated, or prepared horseradish from the store.
  • Onion: fresh, yellow, white or sweet.
  • Caraway seeds.
  • Salt and pepper.

Instructions How to Make Reuben Egg Rolls

Lay the Egg Roll wrapper on a board.

Lay some drained (dry) Cabbage diagonally on the Egg Roll wrapper.

Sprinkle caraway seeds on top, as many or few as you like. Lay the Corned Beef shreds on top.

Using a brush or a clean finger tip, dampen all 4 edges with water.

Fold one corner over, trapping the contents and pulling the Egg Roll wrapper taut around the filling.

Fold in each end, making sure they adhere to the rest of the Egg Roll.

Continue to fold it over, until the filling is well contained within the Egg Roll wrapper.

Place as many as you can fit into the air fryer. Brush with olive oil. Put into the air fryer for 7 minutes at 350 degrees F. Turn once, halfway through.

Instructions How to Make Reuben Sauce

The only prep to do for the sauce is to grate the onion. Use a fine grater that will cause the pulp and juice to separate. Save the pulp and discard the juice.

Put all the sauce ingredients into a bowl (mayonnaise, ketchup, horseradish, Worcestershire sauce, grated onion, salt and pepper. Whisk together well.

Flexibility

Egg Roll wrappers are a key ingredient in this recipe. However if you don’t have or can’t get any, then there are a few substitutions such as wonton wrappers, flour tortillas or spring roll wrappers. I used the Twin Dragon brand because they are all natural.

Substitute Corned Beef with pulled pork or shredded beef.

The Cabbage to use in this recipe should be what is leftover from St. Patrick’s Day. Any type of sauerkraut can be used or raw shredded Cabbage. As I mentioned earlier, I used my own Fermented Cabbage. Kimchi is also an alternative Cabbage based food to use.

For the sauce, low fat mayo or mayonnaise alternative can be used. Also sour cream or plain yogurt.

Instead of ketchup, use tomato paste or tomato puree. If using either of those as a tomato ketchup alternative, the acidity level will rise and the flavor will be a bit acidic which is not the desired result. Add a little natural sweetener, such as honey, to balance out the acidity that the tomato paste or puree provide.

Any type of oil or fat that works well in an air fryer will work instead of olive oil.

Worcestershire sauce can be replaced with soy sauce mixed with a little apple cider vinegar.

Creamed horseradish is a substitute for freshly grated or prepared horseradish, use double the amount.

If fresh onion is not available use grated garlic, about 3-4 cloves or 1 tsp of onion powder.

Caraway seeds can be replaced with fennel or celery seeds.

Feel free to add a slice of Swiss Cheese when making these Reuben Egg Rolls.

Scale down the quantity of Egg Rolls you make, based on the amount of Corned Beef and Cabbage you have available.

Uses for Reuben Egg Rolls

This recipe for Reuben Egg Rolls is a great way to use up leftover Corned Beef and Cabbage. These Egg Rolls make great lunches, appetizers and even a light dinner when served with a side dish, such as a salad.

Storage

Store leftover Reuben Egg Rolls in an airtight container in the refrigerator for about 3 days. Reheat them in the air fryer for about 5 minutes at 350 degrees F. Check the internal temperature using a digital thermometer. When 165 degrees F. has been reached, then the Reuben Egg Rolls are hot and safe to eat.

A Tip From Me

I encourage you to buy an extra quantity of Corned Beef and Cabbage for St. Patrick’s Day. The leftovers will be the main ingredients for this meal preparation the following day. Reheated Corned Beef and Cabbage sometimes is not an appetizing meal to look forward to. This recipe for Reuben Egg Rolls will have mouths watering!

  • Can I shallow fry these Reuben Egg Rolls in a skillet? Yes, add enough high temperature oil to a skillet or fry pan until it is a third full. Once the oil has reached 350 degrees F., add the Egg Rolls. Cook on each side for 2-3 minutes.
  • How do I prevent my Egg Rolls from being soggy? Ensure the Cabbage is well drained. Pat the cabbage dry using paper towel, just to be sure.
  • Can homemade Reuben Egg Rolls be frozen before cooking? Yes, assemble the Egg Rolls and place them on a baking tray in a single layer. Place the tray in the freezer. Freezing them individually this way, will allow you to put them all, when they are fully frozen, into a freezer Ziploc bag. Remove the quantity you want and air fry according to the instructions in the recipe.
  • Can I put the sauce inside the Egg Roll? No, the sauce would make it too soggy, instead save it for dipping.

  • Once the first batch of Egg Rolls are cooked, transfer to a plate and cover with clean cloth to retain the heat. Place second batch into the air fryer, brush with oil and cook.
  • While the Egg Rolls are frying, prepare the sauce. Grate the onion using a fine grater. This will cause the pulp and juice to separate. Save the pulp and discard the juice.
  • Put all the sauce ingredients into a bowl (mayonnaise, ketchup, horseradish, Worcestershire sauce, grated onion, salt and pepper. Whisk together well.
  • Place the second batch of Egg Rolls on the plate with the first batch of Egg Rolls and serve with the Reuben sauce. Enjoy!
