This sage and onion flatbread is your go-to for a quick, crowd-pleasing appetizer or light meal. Using store-bought or homemade pizza dough, it’s ready in under 30 minutes, with sweet onion and fragrant sage stealing the show. It’s vegetarian by default, easily vegan or gluten-free, and pairs perfectly with soups, salads, or a glass of wine. Whether you’re hosting a dinner party or craving a cozy night in, this flatbread delivers restaurant-quality flavor with minimal effort.

The combination of sage and onion reminds me of Christmas in Ireland where sage and onion stuffing is a popular accompaniment to turkey!
What Makes This Recipe Special

- Versatile: Caramelize the onions or add different cheeses, herbs, or veggies for endless variations.
- Quick Prep: Only 5 minutes of prep if using pre made pizza dough!
Ingredients for Sage and Onion Flatbread

- Pizza dough: store bought or homemade.
- Cheese: mozzarella or other easy to melt cheese.
- Olive oil.
- Garlic: fresh.
- Onion: sweet onion is preferable, yellow, red or white onion will also work.
- Sage: dried is best. I used fresh sage that I air dried. Commercially dried sage is also an option.

How to Make Sage and Onion Flatbread

Divide the dough into two pieces. Roll or stretch out the dough into rectangles and place on a baking sheet.

Brush olive oil over the surface of the dough.

Cut the cloves of garlic lengthwise and rub the cut side over the oiled surfaces of the flatbreads.

Sprinkle salt and pepper over the flatbreads and then evenly distribute the cheese.

Peel and slice the onion.

Placed sliced onions on top and dried sage if you are using it. Place the flatbreads into a 350°F / 180°F oven for 20 minutes until golden brown. Finish it by tearing fresh or dried whole sage leaves and sprinkle on top.

This flatbread shines as an appetizer or light meal. Try these pairings:
- Soups: Creamy tomato, butternut squash, or mushroom soup.
- Salads: Arugula with lemon vinaigrette or a Caesar salad.
- Dips: Serve with hummus, tzatziki, or a balsamic vinaigrette like this one.
- Drinks: Pair with a crisp white wine like Sauvignon Blanc, a light red like Pinot Noir or a cold Pilsner.
A Tip From Me
Allow chilled pizza dough to come to room temperature, this will take between 30 – 60 minutes.
For a crispier crust, use a pizza stone or preheat your baking sheet for 30 minutes.
For the best dried sage, buy fresh sage at the store – or grow your own like I do! Dry the sage at room temperature in a warm room or in the sun (if you live in sunnier climes.)
Omit or swap out cheese with a vegan substitute and / or use gluten free flour to meet dietary needs.
