Then in the 19th century, Austrian baker August Zang opened a Viennese bakery in Paris, introducing the croissant. French bakers refined the recipe by using butter, to create the iconic, light, and layered pastry we know today.

The Dutch gave us “cookies” making ‘koekje‘, meaning “little cake,” when they first arrived in the U.S. in the 17th century. These small, sweet baked goods are typically made from flour, sugar, butter, eggs, with various flavorings or ingredients like chocolate chips, nuts, or dried fruit added. They come in diverse shapes, textures (crisp, chewy, or soft), and flavors, ranging from classic chocolate chip to oatmeal raisin or sugar cookies.

In this recipe I use ready made bakery croissants and pair them with scratch made butter shortbread.

All of these ingredients are easily sourced at any supermarket.

Ingredients Used to Make These Crookies

  • Croissants: use all butter mini croissants. They have the best flavor at the right size. I used store bought croissants from the bakery department. Feel free to make your own or use frozen or canned croissants.
  • Flour: all purpose flour/ plain flour.
  • Sugar: white granulated.
  • Butter: preferably Irish grass fed butter, your choice of salted or unsalted.
  • Chocolate chips: mini versions are best, choose between dark, milk or white chocolate chips. If preferred use butterscotch or mint chips or mini M&Ms.

Why your crookie might be soggy or dry:

Excess moisture in the ingredients will introduce sogginess. Use all butter croissants and cookie dough that is crumbly and less moist. Shortbread is an ideal candidate.

A low oven temperature will result in undercooked cookie dough that remains wet and gooey. Bake Crookies at 375 degrees F / 190 degrees C. Do not overcrowd the baking tray otherwise steam will be trapped leading to a soggy exterior. Store Crookies in an airtight container only once they have cooled. A warm and humid environment will encourage the croissant to absorb moisture.

Overbaking Crookies will cause them to be dry, so a slightly hotter oven for less time is key. Don’t be tempted to bake at a temperature higher than 375 degrees F / 190 degrees C.

Using croissants or cookie dough containing vegetable fats will lead to a drier product. Too little fat is also not good, so avoid low fat ingredients. Day old croissants will also yield a dryer Crookie.

Prep time shortcuts:

Buy a high quality pre made cookie dough or make your own dough ahead of time. Make extra homemade dough for cookies and freeze the extra for Crookies.

Make them ahead and either refrigerate or freeze them prebaked.

Best reheating method:

Reheat in the oven or air-fryer. They are best enjoyed straight out of the oven.

Texture tips:

Bake for less time if you want a gooey Crookie, or more time for firmer cookie. The cookie dough used will also affect the overall texture. Using oats or chopped nuts will add another layer of texture.

  • 6 small all butter croissants.
  • 4 oz butter
  • 6 oz flour all purpose / plain
  • 2 oz sugar
  • 6 tbsp mini chocolate chips.

Instructions
 

  • Preheat the oven to 375 ℉ / 190℃. Then slice the croissants in half and lay them on a sheet pan.
    6 small all butter croissants.

  • Cut up the soft butter and add to the food processor bowl.

  • Add the sugar.

  • Cream together until the mixture is well blended.

  • Add the flour.

  • Pulse the processor until a dough ball starts to form.

  • Distribute the raw shortbread dough over the croissant halves and add about 4 tbsps of chocolate chips.

  • The Crookies can now be oven baked for between 15-18 minutes until the shortbread starts to turn golden brown.
