It is a moist cake which includes warm spices such as cinnamon, nutmeg, and cloves along with the ‘star of the show’ – carrots. Carrots are grated and bring a unique texture and a subtle sweetness to the Cake.

Is Carrot Cake Mug Cake Healthy?

Not healthy due to its sugar and grain content but it is free from additives such as allulose, sodium acid pyrophosphate and mono calcium phosphate. Ingredients for an Individual Serving of 5 Minute Carrot Cake in a Mug.

Unlike a traditional Carrot Cake, this recipe is for a Carrot Mug Cake with no egg. The Mug Cake is still moist and delicious!

  • Carrots: fresh, preferably organic. I used a homegrown carrot (hence the weird shape!)
  • Butter.
  • Milk: fresh whole milk. Use the same amount of milk alternative if desired.
  • Brown sugar, or white if preferred.
  • Flour: all purpose (plain) flour.
  • Baking powder.
  • Cinnamon: ground.

Step by Step Instructions How to Make Carrot Mug Cake

Peel the carrots.

Grate the carrots.

Melt the butter in the microwave. Depending on the microwave wattage, but this will take about 10 – 15 seconds in a 1000 watt microwave.

Pour in the sugar, milk and then the flour.

Add the cinnamon and baking powder and stir.

Finally add in the grated carrots and mix well. Microwave for about 1 minute (the exact time will depend on your microwave wattage.) Insert a thin metal or wooden skewer into the center of the cake. If the skewer has batter on it, then continue to microwave the cake for 10 seconds at a time until the skewer comes out dry (no batter but a little greasy.)

Spiced Cream Cheese Frosting for the Carrot Cake Mug Cake

While the carrot cake is baking in the microwave, make the frosting using powder sugar, cream, whipped cream cheese and cinnamon.

Combine all the ingredients in a bowl and blend well.

Remove the carrot cake from the microwave once it has finished baking and add the frosting to the top.

If you prefer to measure the ingredients on a digital scale, how’s the quantities you will need. Measure in grams to be more accurate.

  • 28g grated carrots.
  • 38g flour.
  • 28g butter.
  • 40g / ml milk.
  • 21g brown sugar.
  • 4g cinnamon.
  • 2g baking powder.

Microwave for 1 minute on high in 1250 watts microwave.

A Tip From Me

To make this Carrot Cake in Mug recipe even easier, make it in bulk and use pre-shredded carrots.

Add the dry ingredients (flour, baking powder, sugar, and spices) to a resealable bag. Write on the bag how many cakes the dry ingredients will yield. Add the corresponding quantity of butter, milk and carrots to make one cake.

These pre mixed dry cake ingredients will last for up to 6 months in a cool dry pantry. Freeze it for up to a year. The mix can be used straight from the freezer. Allow extra time in the microwave to accommodate the extra cold ingredients.

Bring a portion of separated dry and wet ingredients to work (or school for older kiddos with access to a microwave.) Add the wet ingredients to a mug and microwave long enough for the butter to melt (approximately 15-20 seconds). Then add the dry ingredients to the mug. Blend well and microwave for about 1 minute on high power (the amount of minutes stated is only a guide line, higher wattage microwaves will take less time.) Insert a slim knife into the center of the cooked cake and inspect the knife blade to ensure it is not covered in batter. Expect it to be a little greasy. This post is for a Carrot Cake in microwave recipe. Can I use this recipe and make it in the oven?

Yes, this recipe will work for oven baking. Use an oven proof dish (don’t use a mug unless you are certain it is ovenproof,) that will accommodate 8oz / 250ml of cake batter will space for rising. A 10oz / 300g container should work.

Why not buy a Mug Cake packet in the store?

They are convenient, but also full of chemicals. Check out these individual cake packets sold through Amazon. They contain allulose (a sweetener banned in Europe and Canada because it is a possible carcinogen, at the very least it can cause stomach discomfort). Also sodium acid pyrophosphate (added to preserve color, is also considered harmful to your immune system if eaten in large quantities), and lastly mono calcium phosphate (a raising agent associated with increased risk for cardiovascular disease).
